Lamb Kofte Kebabs

Super simple to make but took ages to perfect and just the best quick meal when you fancy something that feels naughty but you can't be bothered to go out. I'd been trying to recreate the delicious Kofte from my local kebeb shop for years and finally am getting somewhere close, it's not about the spices it's all about the herbs. I love it so much I made sure I grow the fresh herbs for it at home and have a pack of mince in the freezer so that I can always whip up some if if the mood takes me.

Goes brilliant with the Simple Flatbread Recipe and Bulgar Wheat Salad or with some shop bought pittas and a good dollop of chilli sauce

Ingredients

Serves 2

  • 250g lamb mince

  • 1/2 tsp ground cumin

  • 1/2 tsp ground coriander

  • 1/2 tsp ground cinnamon

  • 1 chopped red chilli or 1/4 tsp chilli flakes (omit to tone down the heat)

  • 2 cloves of chopped garlic

  • 1/4 tsp sea salt

  • 1 tbsp chopped fresh thyme

  • 2 tbsp chopped fresh parsley

  • 2 tbsp chopped fresh chives

Method

Pound the garlic with the salt in a pestle and mortar or just crush it together in a bowl if you don't have one. I found this tones down the harshness of the garlic and spreads it more evenly when mixed

Now grab all your ingredients and put them in a mixing bowl and using your hands mix all together. You want to be fairly vigorous in the mixing as the meat needs to be pounded together to enable it to bind. To do this I use my fist and grind the meat down until I can't see the pieces of mince any more and it has the consistency of sausage meat.

Once this is done shape into a ball and cover then leave in the fridge for an hour (this can be left out but helps firm up the mixture if you want to use on skewers).

Once done divide the meat into equal portions and either cook under a grill, on a bbq on skewers, or my personal favourite as there is no need to chill, make into small round sausage shapes and fry. Both ways will take about 8 to 10 minutes until the outside has a slight char and the middle is cooked.
