Panko Chicken Burgers with Beach Sauce

This is one of my favourite recipes as it's just so light and summery which doesn't normally happen with burgers.

 

Using chicken thighs means it's half the price to make, doesn't dry out and requires less work than beating a chicken breast into shape. We get savoury, crisp breadcrumbs and the fact that it can be oven cooked so it doesn't feel heavy and oily. Then add in my gloriously fruity Beach Sauce and the whole thing just makes sense from every angle.

Ingredients

makes 2

  • 2 brioche buns

  • 2 boned and skinned chicken thighs

  • 2 handfuls panko breadcrumbs

  • 1 tsp smoked paprika

  • 1/2 tsp garlic granules

  • 1/2 tsp dried thyme

  • a pinch of salt and pepper

  • 1 egg beaten

  • 2 tbsp plain flour

  • 3 tbsp veg oil

  • 4 tbsp Beach Sauce

  • Salad of your choosing

Method

Start by trimming any excess fat off your chicken thighs and give them a good check in case there are any bits of bone still attached. This shouldn't be the case if you are using some from a butcher but I find often the supermarket ones have a bit still attached and no one wants that in their burger.

Turn on the oven and get it heated up to 200C (390F)

Now get two plates and on one put the flour and in the other the beaten egg. We are going to toss the thighs in the flour first then drop them in the egg mixture while we prepare the crumb.

Dust any residual flour off the first plate and put on two handfuls of panko breadcrumbs. Now mix into these the paprika, garlic granules, dried thyme and a pinch of salt and pepper.

Next take your chicken thighs out of the egg and turn the in the breadcrumbs to get them coated so when they are laid flat they are completed covered.

Grab a tray for the oven and cover it with baking parchment then pour on a little of the vegetable oil and spread it around the tray. This just allows the crumb to soak it up a little and gives you a crisp bottom. Next lay the chicken on the tray and drizzle the rest of the oil on top to crisp that side. Whack it in the oven for 20 mins.

Whilst the chicken is cooking you can toast your buns and prep any salad you prefer. I really like some raw red onion and lettuce on this. Also remember to grab your Beach Sauce out of the fridge.

Once the chicken is done just layer up your burger, put two good tablespoons of the beach sauce on top and tuck in.
