
Canarian Spreads

Ingredients
Makes 200g each
Chorizo Spread
100g ready to eat chorizo
100g cream cheese
juice of half a lemon
Goats Cheese Spread
125g soft goats cheese
1 medium onion
3 large cloves of garlic
1 tbsp granulated white sugar
1 tbsp olive oil
pinch of salt
Method
Chorizo Spread
First off take the skin off the chorizo then cut into small pieces to help out your blender. Add the chorizo with the cream cheese and lemon juice to the blender and whizz until smooth.
That's it super simple but super tasty
Goats Cheese Spread
A bit more cooking required here so start by dicing the onion and garlic. Then add to a small pan with the olive oil and on a low heat sweat for 10 minutes stirring often. After 10 add in the sugar and sweat for 5 more before adding in the garlic for another 5 to soften. By this point the onions should be soft and golden in colour.
Add the onions and garlic to a blender with the goats cheese and whizz until all the onion bits have dissappeared and you have a smooth paste.
Decant into a covered bowl and chill in the fridge to allow the goats cheese to firm up before serving.
These two spreads are from my recent holiday in Tenerife, they are such nice simple recipes but pack a punch of flavour. The chorizo one is warming and rich with a hit of citrus to cut through it. The goats cheese is light and sweet with a punch of garlic.
I loved both of these in Tenerife and though they worked really well together for a quick and easy party appetizer. You can make a day or two in advance as time in the fridge helps both to firm up then just serve with loads of fresh baguette slices.
