
Coronation Mackerel

Ingredients

250g smoked mackerel
100g mayonnaise
100g greek yoghurt
40g sultanas
2 tbsp mango chutney
4 tsp mild curry powder
2 tbsp chopped coriander
Method
So this one is going to be very easy. Start by chopping the coriander then add to a good sized bowl with the mayonnaise, yoghurt, sultanas, mango chutney and curry powder. Now mix until well combined.
Flake off the mackerel into chunks, removing any bones, then add to the sauce and gently mix through.
That is it, just serve in sandwiches, on a salad or smothered over a jacket potato.
Here I'm replacing coronation chicken with my coronation mackerel recipe and it's a wonderful thing. The strength of flavour of the smoked mackerel really cuts through the slightly curried but sweet sauce.
With no cooking involved it's super quick and simple and makes perfect filling for a good sandwich or smothered over a jacket potato.
