
Fish Bites

Ingredients
Serves 2
250g skinless cod fillet (you can use any white fish or chicken)
100g lightly salted tortilla chips
2 tbsp plain flour
2 tbsp vegetable oil
1 egg
1 tsp smoked paprika
1 tsp garlic granules
2 tsp dried oregano
salt and pepper
Method
To prepare the fish take your chosen fillets and pat them dry with kitchen towel then cut them into nugget sized bits about an inch long. Toss these on a plate in the plain flour to get a nice coating that will help the crust stick.
Once the fish is floured crack your egg into a bowl and beat it a bit before throwing in the fish to coat.
Now for the exciting bit. Take you tortilla chips and smash them up until you have no bits more than about 2mm. I use a pestle and mortar but a rolling pin or even just your hands will do the job. Then put these on a plate and add the smoked paprika, garlic granules, oregano and a pinch of salt and pepper. Mix together well.
Drop in the fish a piece at a time rolling it around until covered. Place the coated fish bites straight onto a baking tray greased with half the vegetable oil. Once they are all coated drizzle the remaining oil over the top then bake in the oven at 180c (360f) for 15 mins (20mins if using chicken), turning halfway through.
All done, serve in tacos or just with chips and ketchup, they are great.
I love these little crunchy little fish bites and the recipe is so easy and open for experimentation with the flavours.
For kids of all ages make homemade fish fingers just by cutting the fish larger or use chicken for your own nuggets. For something a bit more special serve with tortillas, salad and salsa for fish tacos. You will always have a great meal no matter how you do it.
