Spicy Prawn Fajitas

Ingredients

Serves 2

  • 200g raw prawns

  • 1 large avocado

  • juice of 1 lime

  • 1 tsp dried oregano

  • 1.5 tsp chipotle paste

  • 2 garlic cloves

Method

We'll start with the marinade so juice your lime and pour into a bowl. Then chop the garlic as fine as you can and add to the lime juice. To that marinade add the oregano and the chipotle paste then just mix together well.


Now shell the prawns if they aren't already and make a cut through the back to pull out any of the intestinal tract. This also allows them to soak up a bit more marinade so is worth doing even if there is none there.


Add the prawns to the marinade, mix well then cover and leave in the fridge for 2 hrs to absorb some of that flavour. The lime will start to turn them pink as they rest.


Once you are ready to cook. Pour the prawns and all the marinade into a very hot frying pan and cook for 2- 3 minutes turning now and again. The prawns will cook fast and the marinade will reduce giving you a lovely sauce.


Once cooked pour it all in a bowl then chop the avocado into small cubes and mix through.


Now grab some tortillas and shredded lettuce and dig in

Fajitas of any kind are great but if you want something different to the usual chicken or beef try my spicy prawn fajitas. They make such a light and fresh dinner with a bit of smoky spice from the chipotle.


Very quick to make, just a bit of mixing, some time marinating then cooks in five minutes. Lovely on a hot afternoon with a cold glass of white wine or beer


If you can't get chipotle paste, a red chilli and 1/2 tsp of smoked paprika will get the smoky flavour that really makes this dish
