
Sweetcorn and Black Bean Salsa

Ingredients
Serves 6
400g tin sweetcorn
400g tin black beans
1 small red onion
2 tbsp chipotle paste
2 limes juiced
1/2 tsp sea salt
handful fresh coriander
Method
In a large bowl mix the lime juice and chipotle paste, be careful with the chipotle as most are quite mild but some can be pretty fiery so adjust amounts according to taste.
Now dice the onion very small and drain the sweetcorn and black beans before adding them to the sauce and mixing well. Next add the salt and the chopped coriander, give a good mix and either serve straight away or keep in a sealed container in the fridge until ready to use.
Sealed it will keep for a week so can be used in a variety of meals
As salsas go this one is incredible, the earthiness of the black beans goes so well with the sweetness of the corn and the zing of the lime, add a bit of smoky heat from the chipotle and you have a match made in heaven.
It works as a side or as a part of a main dish. Have it as a topping for tacos, with steak, fish or sprinkle into a salad to add pops of amazing flavour.
Once made it keeps for a week so can be used in a variety of meals to add a bit of a lift.
