
Smoked Salmon & Broccoli Frittata
A simple and quick spring meal using smoked salmon and broccoli to give it a real light freshness. Goes great with a side salad and glass of white wine on a warm evening.

This is just so easy to make and uses very few ingredients to get something that really tastes quite special. Any leftovers are great for a lunch or picnic and still delicious cold.

400g baby potatoes

100g tenderstem broccoli

small handful of parsley

100g smoked salmon

2 tomatoes

4 eggs

salt and pepper

1 tbsp olive oil

Method
Start by slicing your potatoes into rings about 1/2cm thick and add these to a pan of boiling water, boiling for 5 mins until they have started to soften. Once these are done add the broccoli in with the potatoes and cook for 2 mins more before draining and leaving open in the pan off the heat to steam off the remaining moisture.

While they are drying out a bit quarter the tomatoes and remove the seeds before chopping into small 1/2 cm cubes. Now remove the broccoli from the pan and chop these down into roughly 1cm chunks.

Last thing to do before you start to cook the frittata is to beat your eggs with a good pinch of salt and pepper then roughly chop the parsley and add it to the egg mixture.

Now it's time to cook. To a cold, small frying pan (preferably with sloping sides) pour in 1 tbsp of olive oil then layer in the potatoes, broccoli, salmon and tomatoes until you have a nice even distribution. Turn on the heat and once you start to hear the pan sizzling pour over the egg mixture. It will seep through all of the gaps and take the seasoning and parsley with it. Leave on a medium heat for 5 minutes to cook the base.

Once that is done the base will be cooked so now you need to turn it and cook the top. Gently slide the frittata out of the pan onto a plate so the uncooked egg mixture is still wobbling about on top, then put the pan over the top of that and turn the plate and pan together to get the frittata back in the pan upside down. Don't worry if a bit broke as the egg cooks it will bind it all back together. If this feels a bit daunting you can cheat if your pan is rated for it and just slide it under a grill to do the top.

Put the pan back on the heat and cook for another 5 mins until done.

Now you can do the same as with the turning or just slide on to a board, slice into portions, serve and enjoy.
