
Tartar Sauce
I love a simple oven cooked fish and chips every now and again, I can't spend hours cooking everyday after all. However it just isn't proper fish and chips without tartar sauce.

There never seems any point buying a big bottle of the stuff as it's not a regular thing and I don't want to waste it so I always just whip up my own. The main ingredients are pickled so once you've got a jar of capers and one of gherkins in the fridge you can put this together any time
Start by draining and chopping up your capers and gherkins. To get a tbsp worth it's about four small cocktail gherkins or one normal. Then finely chop about five chive stems which will give you the required tbsp. You can use other herbs here such as parsley or dill if you have them growing in the garden. I just have so many chives I use these and I like the slight onion flavour.

Add all the chopped ingredients to a small bowl and mix in three really generous tbsp of mayonnaise. Once that's mixed up squeeze in a tbsp worth of lemon juice, give it a last mix around, then cover and chill in the fridge until you are ready to use it.

All done, it doesn't get simpler than that and will taste far better than shop bought ones.
